Wheat and gluten free no bake chocolate cheesecake

 
 
 
 
 
I read somewhere a recipe for a vegan chocolate cheesecake that looked really good, the base was made with almonds and dates, and for the topping, the cheese  was replaced by cashew nuts previously soaked.
I 'm not a Vegan, however I am wheat and gluten free so I gave it a little tweak and it turned out so good that I want to share it with all the chocoholics out there.

You are going to need:
     
  • 150 gr of almonds
  • 150 gr of cream cheese
  • about 24 pitted dates
  • 150 gr of organic dark chocolate
  • 150 gr of whipping cream
  • 140 of Demerara sugar
Grind the almonds and the pitted dates in a food processor, then press the mixture really well in the cheesecake tin until  it forms a sticky paste, and store it in the fridge  while you prepare the topping.
 
 
 
Melt the dark chocolate with a slice of butter, meanwhile mix the cream cheese with the sugar. In another tin whip the cream and then mix in the melted chocolate.
Pour the mixture in the cheese and, you guessed it, mix all really well.
Your topping is ready to spread over the base.
 
Refrigerate for at least two hours.
 
 
 
Eat it all in one go :P
